The Varieties Grown in Panama's Volcanic Highlands
Panama's volcanic highlands support an unusually diverse range of coffee varieties in addition to the world renowned Geisha, with Typica and Bourbon forming the traditional backbone and a remarkable spread of newer and rarer cultivars adding distinct contributions to the region's character.
Caturra and Catuai are widely planted as reliable and productive cultivars that produce quality cups across a range of elevations. Pacamara, the cross between Pacas and the giant-bean Maragogype variety, appears on specialty-focused farms for its distinctive large-bean expression and pronounced fruit character.
The region also grows several less common varieties worth noting. Yellow Bourbon, a natural mutation of red Bourbon that produces yellow rather than red cherries when ripe, is cultivated on select farms for its sweetness and rounded acidity profile. Laurina, sometimes called Bourbon Pointu for its distinctive pointed bean shape, carries a natural genetic mutation that produces beans with roughly half the caffeine of typical Arabica while maintaining cup quality, making it valuable for drinkers seeking natural lower-caffeine specialty coffee. Centroamericano, a relatively new hybrid developed by World Coffee Research and CIRAD as a cross between the rust-resistant Sarchimor T5296 and the Ethiopian Rume Sudan, has scored above 90 points in cupping evaluations at recent specialty competitions, demonstrating that disease-resistant hybrids can deliver specialty-grade cup quality without sacrificing the genetic resilience the industry increasingly needs.
The specific mix on any given farm reflects decades of choices by the families who work the land. Some farms have preserved older plantings of Typica and Bourbon from generations past, while others have adopted newer varieties for disease resistance, distinctive flavor profiles, or yield characteristics. Panama's growing conditions — volcanic soil, cool highland climate, substantial elevation, cloud cover, careful processing — suit a wide range of cultivars.
